Marshmallows and Superfoods

The key to creating gut-friendly marshmallows is gelatin. Gelatin is a complete protein source providing essential amino acids to support cell integrity. This is especially important to help support the cells of the gut wall and help you get more out of the foods you are consuming.
Red superfoods should be an important part of your diet due to their energy boosting and detoxification properties. They also have the ability to fortify the immune system, protect the body from inflammation and oxidative stress, and promote the growth of beneficial bacteria in the gut.

Ingredients

  • 1 cup water, divided in ½
  • 3 tablespoons grass fed beef gelatin
  • 1 cup honey or xylitol
  • 1 teaspoon vanilla extract
  • 1 scoop BIOHM Super Reds
  • Coconut oil
  • Arrowroot starch

Instructions

Line a 8X8 pan with parchment paper and set aside. Lightly grease the paper with coconut oil and sprinkle with arrowroot powder. In a bowl with a stand mixer add ½ cup water then sprinkle the gelatin on top. Mix lightly with a fork and let bloom for 10 minutes.

Meanwhile, heat the other ½ cup of water in a saucepan along with the honey or xylitol over medium heat. Heat to a boil allowing the sweetener to dissolve into the water. Let boil for 2-5 minutes or until a candy thermometer reaches 242 degrees. Turn on the stand mixer then pour in the hot liquid while the mixer is running slowly. Turn the mixer on high and allow to get thick (about 10 minutes).

Add in the Super Reds while the mixer is running, then add the vanilla. Once thick, turn off the mixer and immediately pour into prepared pan. Sprinkle the top with more arrowroot powder. Allow to set for 4-6 hours then cut into squares. Enjoy!
