Sweet Potato Falafel

Get your Vitamin A by using your sweet potato as a falafel base. Serve as an appetizer or side dish or over a bed of greens.

Ingredients:

  • 1 sweet potato
  • 1 cup cooked quinoa
  • ¼ cup almonds
  • 1 tsp salt
  • 1 egg
  • ½ cup flour
  • Ranch dressing
  • Cracked pepper

Instructions:

Preheat oven to 375°. Prick the sweet potato with a fork all over. Place on a baking sheet and bake for 30-40 minutes or until cooked through. Allow to cool then remove peel.

Add cooked sweet potato, quinoa, almonds, salt and egg to a food processor and blend. Stir in flour. Form small balls with your hands and add to a hot skillet with oil. Cook until all sides are browned. Drizzle with ranch and pepper.
