Sweet Potato Falafel

Get your Vitamin A by using your sweet potato as a falafel base. Serve as an appetizer or side dish or over a bed of greens.

  • 1 cup cooked quinoa
  • ¼ cup almonds
  • 1 tsp salt
  • 1 egg
  • ½ cup flour
  • Ranch dressing
